The rope / chain goes limp

Because the boat stops that's when they know

The anchor stops going down and there is a little bump and the boat stops.

Reverberation effect back up the anchor line, then they stop/ drift about in that area.

I never really know when my anchor hits bottom...it's not really relevant. I decide how much rode to deploy based on depth and bottom composition as reported by the sonar.

It's not when the anchor hits, it's when it digs in. then you know because the tension on the line and the angle of the line change. (Then you back off enough to get a good bite and tie the line off.) If the ship's not moving very fast, it takes experience to know it happened, otherwise it takes one time, and you'll know what it feels and looks like.

I know how deep it is - I let that out and reverse down wind/ current to stop piling of the chain, I let out the rode I want, somewhere between 3 and 10 to 1 depending on relevant local factors and then I set the pick. My boat only knows if the skipper has gentle hands, and reacts accordingly. I never let my boats make decisions or take charge.

Boats don't know anything. Skippers calculate how much slack they need from the depth of the water and any tide.
